Panama Finca Deborah Horizon Geisha (Natural Yeast Washed)
Horizon coffee is made from Panama Geisha cherries harvested at peak ripeness (21-24 BRIX). The cherries undergo a meticulous process, beginning with sorting and placement into hermetically sealed tanks where a special yeast strain is added. This fermentation lasts over 100 hours, allowing the yeast to infuse the coffee seeds with vibrant fruit and floral notes, enhancing their acidity and body.
During fermentation, the cherries are carefully monitored for pH and temperature to maintain quality. Afterward, they are transferred to shaded, three-tiered raised beds designed by Jamison, where temperature and humidity are controlled. The cherries are evenly dried for 12 days to reach an ideal moisture level of 11%, preventing unwanted microbial activity.
Finally, the dried cherries are stored in Grain-pro bags under cool conditions for a reposo period, where they stabilize and absorb more flavor from their parchment before hulling, sorting, and shipping. This method preserves the Panama Geisha’s exquisite flavor profile.
